Two-Potato Hash

White and sweet potatoes are tossed with spices and roasted to crispy perfection.

Ingredients

  • 600g white potatoes (russets are good), peeled and cubed
  • 600g sweet potatoes, peeled and cubed
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 tsp dried thyme
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 cup oil

Directions

  1. Preheat oven to 450 degrees.
  2. Combine the potato cubes with the oil and spices in a large bowl.
  3. Transfer the potatoes to a sheet pan. Bake 40-60 minutes, flip and stir every 20 minutes. Potatoes are done when outsides are crispy.
