These take a bit of time, but the kids love them so much it’s worth the extra effort.

Ingredients
- 6 russet potatoes, scrubbed clean
- 1/2 cup sour cream
- 1/2 tsp garlic powder
- 1/4 cup butter
- 1/2 cup milk
- 1/4 cup finely chopped chives or green onion
- 4 slices of bacon made into bacon bits (or 1/2 cup store-bought bacon bits)
- 1/2 tsp salt or to taste
- 1/4 tsp pepper or to taste
- 1 1/2 cups shredded cheddar cheese, divided
Directions
- Preheat oven to 375 degrees. Poke the potatoes all over with a fork. Bake in the oven 50-60 minutes or until soft in the center. Allow to cool (or hold them with an oven mitt like I do because I’m impatient).
- Slice each potato in half lengthwise and use a spoon to scoop the potato into a bowl.
- Mash the potato in a bowl with the sour cream, butter, milk, and seasonings. Fold in the chives, bacon bits, and 3/4 cup of shredded cheese.
- Fill each scooped-out potato shell with the mash mixture. Top with the remaining 3/4 cup shredded cheese.
- Bake for an additional 15-20 minutes. Serve hot.
