Tropical Slaw

A fresh twist on classic slaw. Great in the summer with tacos, nachos, kebabs, or any meat in a bun.

Ingredients

Dressing: -2 tsp red wine vinegar -2 Tbsp olive oil -Juice of 2 limes -½ tsp garlic, minced -⅛ tsp pepper

Slaw: 2 cups shredded red cabbage 2 cups shredded romaine lettuce ½ cup shredded carrot 1 mango, peeled and diced 1 cup diced cucumber

Directions

  1. Combine vinegar, oil, lime juice, garlic and pepper in a small bowl.
  2. In a large bowl combine the slaw ingredients and toss to combine. Pour the dressing over the slaw mixture and toss well to coat.
  3. Cover and refrigerate for at least one hour to allow flavours and texture to develop.
