Ingredients
Dressing: -2 tsp red wine vinegar -2 Tbsp olive oil -Juice of 2 limes -½ tsp garlic, minced -⅛ tsp pepper
Slaw: 2 cups shredded red cabbage 2 cups shredded romaine lettuce ½ cup shredded carrot 1 mango, peeled and diced 1 cup diced cucumber
Directions
- Combine vinegar, oil, lime juice, garlic and pepper in a small bowl.
- In a large bowl combine the slaw ingredients and toss to combine. Pour the dressing over the slaw mixture and toss well to coat.
- Cover and refrigerate for at least one hour to allow flavours and texture to develop.
