Teriyaki Chicken

I can never go back to bottled teriyaki sauce.

Ingredients

  • 1 lb boneless skinless chicken thighs
  • canola oil
  • 1 inch knob of ginger root, grated and save the juice
  • 3 green onions, chopped roughly
  • 1 Tbsp sake
  • 1 Tbsp mirin
  • 1 Tbsp sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp water

Directions

  1. Prick the chicken all over with a fork. In a small bowl combine the sake, mirin, sugar, soy sauce, and water. Stir to dissolve the sugar. Set the sauce aside.
  2. In a large frypan heat some canola oil on medium heat and brown the chicken thighs on both sides.
  3. Lower the heat. Add the reserved sauce to the pan along with the ginger and green onion. Simmer the meat in the sauce until the sauce reduces and the sugar caramelizes and clings to the meat. Serve hot.
