Easy and versatile pulled pork can be served in buns, or over rice, as a meat entree, or used on nachos, pizza, or in wraps.

Ingredients
Spice Rub:
- 3 Tbsp chili powder
- 1 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp onion powder
- 1 Tbsp dried parsley
- ¼ tsp chipolte powder
- 2 tsp salt
Also:
- 4-5 lb pork butt (sold as “pork shoulder butt end” or similar)
- 2 medium onions, sliced
Directions
- Mix the chili powder, coriander, cumin, onion powder, parsley, chipolte, and salt. Rub over the entire roast (use all of the spice mix for a 4-5 pound roast).
- Line the bottom of a slow cooker with a layer of sliced onions. Rest the spice-rubbed roast in the onions and cover with any remaining onions. NO LIQUID REQUIRED.
- Cook on HIGH for 5-6 hours, then low for another 3-4 hours. Pork should be falling apart when done. Shred the meat with all the contents of the crockpot.
