Mini Meatloaves with Roasted Red Pepper Glaze

Meatloaf my kids don’t make faces about. Fabulous!

Ingredients

  • 2/3 cup of roasted red peppers, divided
  • 1 tsp lime juice
  • 1 tsp honey
  • 1 lb ground beef
  • 2/3 cup breadcrumbs
  • 1/3 cup frozen corn kernels
  • 2 Tbsp tomato paste
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/4 tsp cumin

Directions

  1. Preheat oven to 375F.
  2. In a small blender combine 1/3 cup of roasted red peppers, 1 Tbsp of water, lime juice, and honey. Blend until a smooth sauce. Set aside.
  3. In a large bowl mix the ground beef, bread crumbs, corn, tomato paste, egg, the remaining 1/3 cup roasted red peppers, and the spices.
  4. Divide the meatloaf mixture to fill ten cups of a cupcake pan. Make a small indent in the center of each ‘mini meatloaf’. Spoon a bit of the red pepper glaze into the center of each meatloaf and spread around a bit with the back of the spoon.
  5. Bake until cooked through - about 30 minutes. Serve hot.
