Meatloaf my kids don’t make faces about. Fabulous!

Ingredients
- 2/3 cup of roasted red peppers, divided
- 1 tsp lime juice
- 1 tsp honey
- 1 lb ground beef
- 2/3 cup breadcrumbs
- 1/3 cup frozen corn kernels
- 2 Tbsp tomato paste
- 1 egg
- 1/2 tsp salt
- 1/2 tsp chili powder
- 1/4 tsp cumin
Directions
- Preheat oven to 375F.
- In a small blender combine 1/3 cup of roasted red peppers, 1 Tbsp of water, lime juice, and honey. Blend until a smooth sauce. Set aside.
- In a large bowl mix the ground beef, bread crumbs, corn, tomato paste, egg, the remaining 1/3 cup roasted red peppers, and the spices.
- Divide the meatloaf mixture to fill ten cups of a cupcake pan. Make a small indent in the center of each ‘mini meatloaf’. Spoon a bit of the red pepper glaze into the center of each meatloaf and spread around a bit with the back of the spoon.
- Bake until cooked through - about 30 minutes. Serve hot.
