Chicken Fajitas

Quick and easy fajita filling of chicken, onion, and peppers. Spiced mildly for kids.

Ingredients

  • 1 lb chicken breast
  • 1 medium onion
  • 1 lime
  • 3 bell peppers
  • 3 Tbsp oil
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp salt

Directions

  1. Thinly slice the onion and peppers. Slice the chicken breast into strips.
  2. In a bowl combine 1 Tbsp of oil, the juice from half the lime, spices, and salt.
  3. Toss the chicken strips in the oil-spice mixture.
  4. Heat 1 Tbsp of oil in a frypan. Cook the chicken 3-5 minutes until just cooked through. Remove from the pan and set aside.
  5. Heat 1 Tbsp of oil in the same frypan. Stir-fry the peppers and onion a few minutes until your desired doneness. Add the chicken back to the pan, stir, and heat through.
  6. Chicken mixture is served hot inside soft tortillas and optional other toppings. Cut the remaining 1/2 lime into wedges and serve with fajitas.
