Quick and easy fajita filling of chicken, onion, and peppers. Spiced mildly for kids.

Ingredients
- 1 lb chicken breast
- 1 medium onion
- 1 lime
- 3 bell peppers
- 3 Tbsp oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/2 tsp salt
Directions
- Thinly slice the onion and peppers. Slice the chicken breast into strips.
- In a bowl combine 1 Tbsp of oil, the juice from half the lime, spices, and salt.
- Toss the chicken strips in the oil-spice mixture.
- Heat 1 Tbsp of oil in a frypan. Cook the chicken 3-5 minutes until just cooked through. Remove from the pan and set aside.
- Heat 1 Tbsp of oil in the same frypan. Stir-fry the peppers and onion a few minutes until your desired doneness. Add the chicken back to the pan, stir, and heat through.
- Chicken mixture is served hot inside soft tortillas and optional other toppings. Cut the remaining 1/2 lime into wedges and serve with fajitas.
