Chashu Pork

A fatty savoury addition to a bowl of ramen.

Ingredients

  • 2 lbs of sliced pork belly strips
  • 1/2 cup soy sauce
  • 1 cup sake
  • 1 cup mirin
  • 1/2 cup sugar
  • 6 scallions, chopped
  • 6 whole garlic cloves
  • 2 inches of fresh ginger, sliced
  • 1 shallot, roughly chopped

Directions

  1. Preheat oven to 275F.
  2. Get a very large pan with a lid, one that you can use on the stovetop. On the stovetop heat 1 cup of water, soy sauce, sake, mirin, sugar, scallion, garlic, ginger, and shallot. When the sugar is dissolved and it just reaches a boil add the pork belly.
  3. Move the pan to the oven and cover with the lid slightly ajar. Cook for 3-4 hours, turning the pork occasionally.
  4. Separate the pork from the broth. Top any bowl of ramen with the slices of pork. Pork can be frozen in portions and thaws quickly in a hot bowl of noodles. The leftover sauce can be used to marinate soft-boiled eggs.
