Breakfast Sausage

Though less convenient than just buying pre-made breakfast sausages, if you make your own you can control the ingredients to avoid allergens, gluten, etc.

Ingredients

  • 1 lb ground pork or 1 lb pork butt + ¼ lb fatback
  • 1 tsp salt
  • ¾ tsp pepper
  • 2 tsp fresh sage, chopped
  • 1 tsp fresh thyme, chopped
  • ¼ tsp fresh rosemary, chopped
  • ¼ tsp nutmeg

Directions

  1. Mix the ground pork and spices, or put all through a meat grinder.
  2. Use to stuff sausage casings, or form into round patties, or simply cook as ground meat.
