Grated tofu is baked until crispy and then rehydrated with barbeque sauce to make a versatile crumbled protein that works great in wraps or salads.

Ingredients
- 450g of firm or extra-firm tofu, pressed
- 1 Tbsp canola oil
- 1 Tbsp soy sauce
- 2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 cup barbeque sauce
- 1/4 cup water
Directions
- Preheat oven to 350 degrees.
- Grate the block of tofu into shreds. Transfer to a bowl and set aside.
- In a small bowl mix the oil, soy sauce, and spices. Toss the seasoning mixture with the tofu shreds until they are well-coated, then transfer to a sheet pan.
- Bake the tofu for 20-30 minutes until it becomes dehydrated brown crumbles.
- Heat the barbeque sauce and water in a shallow pan. Add the shredded tofu and stir as it absorbs the liquids.
